Results showed that the two oxidases both could resist high temperature, but the heat stability of ascorbic acid oxidase is higher than that of polyphenol oxidase.
The reaction is catalyzed by an ascorbic acid oxidase and also nonenzymatically by traces of heavy metal ions and heine-containing compounds, e.g., peroxidase or catalase.
